Gluten Free Chocolate Chip Muffins

What do you do when you hear "quarantine" and then hit up Costco? You buy the most random things like 4.5 lbs of chocolate chips of course!
I'm not sure if it was a subconscious thing knowing all 5 of us would be home together but either way, I knew I needed to come up with at least a few ways to transform these babies into something somewhat healthy for me and my family.

Here's what I came up with: Gluten Free Chocolate Chip Muffins
We don't have any specific allergies in my house but as someone (and a kid) with IBS I do try to keep lactose and gluten to a minimum as both seem to be triggers for us. FYI, if you have a dairy allergy you can easily make these dairy-free by getting dairy free chocolate chips.
Gluten Free Chocolate Chip Muffins
INGREDIENTS
1/3 cup of canned pure pumpkin puree (not pumpkin pie filling)
1/3 cup pure maple syrup (or honey)
2 eggs
1 rounded cup mashed ripe banana (about 3 medium or 2 large)
1/4 cup unsweetened vanilla almond milk
1 teaspoon gluten-free baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 3/4 cups gluten-free all purpose flour (can use regular all purpose but won't be gluten free)
1/2 cup chocolate chips (can use dairy free)
INSTRUCTIONS
Preheat oven to 325 degrees Fahrenheit and spray muffin tin with spray.
In a large bowl, whisk the pumpkin and pure maple syrup (or honey) together. Add the eggs and beat well, then whisk in the mashed banana and almond milk.
Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Fold in the flour, mixing just until the batter is combined.
Gently fold in chocolate chips.
Evenly distribute batter into prepared muffin tin and bake 16-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool. Enjoy!
Notes: You can also change it up with different mix-ins like walnuts instead of, or in addition to, the chocolate chips.
