Healthy Homemade Granola

I love granola! It's crunchy. It's sweet. It's perfect on so many things like my morning yogurt parfait, my daily super-food shake or even plain in a bowl with cold milk (well, almond milk for me) as a cereal.

What I don't like about granola is that it can be really high in added sugar and store-bought varieties can come with a bigger price tag than my $125 grocery budget per week allows. So when I found this homemade (and nutrition plan approved) granola from one of my favorite cookbooks, FIXATE Volume 2, I had to make it.


The original recipe uses pecans and ghee. I didn't have either so I swapped chopped walnuts and coconut oil. I think it turned out fine. But FYI...don't let it overcook. It burns fast and yes, I learned that the hard way!
